This filling sandwich looks fancy but is really simple to make.  Each slice is packed with ground beef, broccoli and cheese.  Served with a green salad, this beefy sandwich makes a terrific lunch or dinner.

Broccoli Beef Braids

1 lb. ground beef

½ cup chopped onion

3 cups frozen chopped broccoli

1 cup (4 oz.) shredded part-skim mozzarella cheese

½ cup sour cream

¼ tsp. salt

¼ tsp. pepper

2 tubes (8 oz. each) refrigerated crescent rolls

Preheat oven to 350 F.  In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain.  Add the broccoli, cheese, sour cream, salt and pepper; heat through.

Unroll one tube of dough on a greased baking sheet; seal the seams and perforations, forming a 12×8 inch rectangle.  Spread half of beef mixture lengthwise down the center.  On each side, cut 1 inch wide strips 3 inch into center.  Starting at one end, fold alternating strips at an angle across filling; seal ends.  Repeat.

Bake 15-20 minutes or until golden brown.        2 loaves (8 serving each)

These special appetizers are as eye-catching as they are tasty.  With a rich cheese-and-veggie-filling, the crispy phyllo bundles could even be served as part of a brunch buffet.

 

Veggie Quiche Bundles Recipe

Veggie Quiche Bundles

1 cup chopped fresh mushrooms

½ cup diced zucchini

¼ cup chopped red onion

1 Tbsp. plus 1/3 cup butter, divided

1 plum tomato, seeded and diced

3 eggs

½ cup milk

1 Tbsp. prepared pesto

¼ tsp. coarsely ground pepper

½ cup crumbled feta cheese

½ cup shredded part-skim mozzarella cheese

12 sheets phyllo dough (14×9 inches)

In a skillet, sauté the mushrooms, zucchini and onion in 1 tablespoon butter until mushrooms are tender; stir in tomato.  In a small bowl, whisk the eggs, milk, pesto and pepper.  In another bowl, combine feta and mozzarella cheeses.

Melt remaining butter.  Place one sheet of phyllo dough on a work surface; brush with butter.  Repeat with three more sheets of phyllo, brushing each layer.  Cut phyllo in half widthwise, then cut in half lengthwise.  (Keep remaining phyllo covered with plastic wrap and a damp towel to prevent it from drying out).

Repeat with remaining phyllo dough and butter.  Carefully place each stack in a greased muffin cup.  Fill each with 4 teaspoons vegetable mixture, 1 tablespoon cheese mixture and 4 teaspoons egg mixture.  Pinch corners of phyllo together and twist to seal.

Bake at 325 F. for 20-25 minutes or until golden brown.  Serve warm.  Refrigerate leftovers.     1 dozen

I cooked up this fresh tasting lasagna for vegetarian customers at a local grocery store, where I work part-time.

Vegetable Lasagna Recipe

Vegetable Lasagna

5 plum tomatoes, chopped

1 ½ cups sliced fresh mushrooms

1 medium sweet red pepper, julienned

1 small yellow summer squash, cut into ¼ inch slices

1 small zucchini, cut into ¼ inch slices

1 medium carrot, shredded

1 small onion, chopped

3 garlic cloves, minced

¼ cup olive oil

1 can (12 oz.) tomato paste

1 cup vegetable broth

2 Tbsp. brown sugar

2 tsp. dried oregano

2 tsp. dried basil

1 tsp. salt

½ tsp. dried thyme

¼ tsp. pepper

1 egg

1 cup (8 oz.) ricotta cheese

6 lasagna noodles, cooked and drained

1 cup (4 oz.) shredded part-skim mozzarella cheese

¼ cup shredded Parmesan cheese

2 Tbsp. grated Romano cheese

2 tsp. Italian seasoning

In a large saucepan, sauté the tomatoes, mushrooms, red pepper, yellow squash, zucchini, carrot, onion and garlic in oil until crisp-tender.  Stir in the tomato paste, broth, brown sugar and seasonings.  Bring to a boil.  Reduce heat; simmer, uncovered, for 30 minutes, stirring occasionally.

In a large bowl, combine the egg and ricotta cheese.  Spread 1 cup vegetable mixture in a greased 8 inch square baking dish.  Layer with two noodles (trimming to fit), half of the ricotta mixture, about 1 ½ cups vegetable mixture and two more noodles.  Top with remaining ricotta mixture, noodles and vegetable mixture.

Sprinkle with cheese and Italian seasoning.  Bake, uncovered, at 350 F. for 30-35 minutes or until bubbly and the cheese is melted.  Let stand 5 minutes before cutting.          4-6 servings

I received this recipe from a good friend of mine.  It is a great was to use up fresh tomatoes from the garden.  It reminds me a lot of pizza.

Basil Tomato Tart Recipe

Pastry for a single-crust pie (9 inch)

1 ½ cups (6 oz.) shredded part-skim mozzarella cheese, divided

5-6 fresh plum tomatoes

1 cup loosely packed fresh basil leaves

4 garlic cloves

½ cup mayonnaise

¼ cup grated Parmesan cheese

1/8 tsp. pepper

Roll pastry to fit a 9 inch tart pan or pie plate; place in pan.  Do not prick.  Line pastry shell with a double thickness of heavy-duty foil.

Bake at 450 F. for 5 minutes.  Remove foil; bake 8 minutes more.  Remove from the oven.  Reduce heat on 375 F.  Sprinkle ½ cup mozzarella over the hot crust.

Cut each into eight (8) wedges; remove seeds.  Arrange over cheese.

In a food processor, process the basil and garlic until coarsely chopped; sprinkle over tomatoes.

Combine mayonnaise, Parmesan, pepper and the remaining mozzarella; spoon over basil.  Bake, uncovered, for 20-25 minutes or until the cheese is browned and bubbly.           8 servings

My husband can’t eat pizza with gluten or sugar in the crust.  Because that leaves out boxed mixes or frozen pizzas, I decided to make my own.

Thin-Crust Gluten-Free Pepperoni Pizza Recipe

Thin-Crust Gluten-Free Pepperoni Pizza

1 ½ cups almond flour

¼ tsp. salt

¼ tsp. baking soda

1 egg

1 Tbsp. grape seed or olive oil

¼ lb. Italian turkey sausage links, casings removed

1 medium, chopped

½ cup pizza sauce

1 garlic clove, minced

½ cup julienned roasted sweet peppers

¼ cup sliced ripe olives

1 cup (4 oz.) shredded part-skim mozzarella cheese

17 slices turkey pepperoni

In a small bowl, mix the almond flour, salt and baking soda.  In another bowl, whisk egg and oil; stir into dry ingredients.  Press onto a 12 inch pizza pan coated with cooking spray; build up edges slightly.  Bake at 350 F. for 8-10 minutes or until edges are lightly browned.

Meanwhile, in a large skillet, cook and stir sausage and onion over medium heat for 4-6 minutes or until sausage is no longer pink.  Spread pizza sauce over crust; sprinkle with garlic.  Top with the sausage mixture, red peppers, olives, cheese and pepperoni.  Bake 18-20 minutes longer or until cheese is melted.                         8 servings
