White Chocolate Strawberry Torte Recipe

White Chocolate Strawberry Torte

1 cup crushed vanilla wafers (about 30 wafers)

½ cup finely chopped almonds, toasted

¼ cup butter, melted

12 oz. white baking chocolate, melted

3 cups whole medium fresh strawberries

4 oz. cream cheese, softened

¼ cup sugar

¼ cup thawed orange juice concentrate

1 tsp. vanilla extract

2 cups heavy whipping cream

1 Tbsp. baking cocoa

Additional strawberries, cut in half

 

Set aside 2 tablespoons wafer crumbs.  Combine almonds, butter and remaining crumbs; press onto the bottom on an ungreased 9 inch springform pan.  Spoon 5 tablespoons of melted white chocolate over crust; sprinkle with reserved wafer crumbs.  Arrange whole strawberries, tips up, over crumbs.

In a bowl, beat cream cheese until smooth.  Add sugar, juice concentrate and vanilla.  Beat in remaining white chocolate.  In another bowl, beat cream until soft peaks form.  Stir 2 cups into the creamed cheese mixture; mix well.  Fold in remaining whipped cream.  Spread between and over strawberries.  Cover and chill for 3 hours or overnight.

Carefully run a knife around sides of pan to loosen.  Remove sides.  Arrange between four 1 ½ inch wide strips of waxed paper over top; sprinkle cocoa between strips.  Remove waxed paper.   Place halved strawberries between cocoa rows.              10-12 servings

Sweet Potato Spice Cookie

¾ cup butter, softened

1 cup sugar

¼ cup packed brown sugar

1 egg

1 cup finely shredded UNCOOKED sweet potato

3 Tbsp. orange juice concentrate

2 cups flour

1 tsp. baking powder

1 tsp. ground cinnamon

½ tsp. baking soda

½ tsp. salt

¼ tsp. ground nutmeg

1 ¼ cups quick-cooking oats

1 cup butterscotch chips

1 cup flaked coconut

1 cup chopped pecans

 

In a large bowl, cream butter and sugars until light and fluffy.  Beat in the egg, sweet potato and orange juice concentrate.  Combine the flour, baking powder, cinnamon, baking soda, salt and nutmeg; gradually add to the creamed mixture and mix well.  Stir in the remaining ingredients.

Drop by rounded teaspoonfuls 2 inches apart onto greased baking sheets.  Bake at 350 F. for 14-16 minutes or until firm.  Remove to wire racks to cool.          7 dozen

These meaty ribs are great picnic fare.  First bake them to make them tender, and then simply finish them off on the grill with a fruity basting sauce.

Peachy Pork Ribs Recipe 

Peachy Pork Ribs

2 racks pork baby back ribs (4 Lbs.), cut into servings-size pieces

½ cup water

3 medium ripe peaches, peeled and cubed

2 Tbsp. chopped onions

2 Tbsp. butter

1 garlic clove, minced

3 Tbsp. lemon juice

2 Tbsp. orange juice concentrate

1 Tbsp. brown sugar

2 tsp. soy sauce

½ tsp. ground mustard

¼ tsp. salt

¼ tsp. pepper

Place ribs in a shallow roasting pan; add water.  Cover and bake at 325 F. for 2 hours.

Meanwhile, for sauce, place peaches in a blender; cover and process until blended until blended.  In a small saucepan, sauté onion in butter until tender.  Add garlic; cook 1 minute longer.  Stir in the lemon juice, orange juice concentrate, brown sugar, soy sauce, mustard, salt, pepper and peach puree; heat through.

Drain ribs.  Spoon some of the sauce over ribs.  Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack.  Grill, covered, over medium heat for 8 to 10 minutes or until browned, turning occasionally and brushing with sauce.             4 servings

1 can (11 oz.) mandarin oranges, drained and patted dry

1 cup (8 oz.) vanilla yogurt

2 Tbsp. orange juice concentrate

2 cups whipped topping

 

In a large bowl, combine the oranges, yogurt and orange juice concentrate.  Fold in whipped topping.  Spoon into serving dishes.  Cover and freeze until firm.  Remove from the freezer 10 minutes before serving.                     4 servings

My family truly loves this recipe.  We don’t fry foods much anymore and prefer to barbecue, so I adapted my mother’s recipe for barbecue sauce to suit our tastes.  Every summer, we have a neighborhood cookout.  I take this chicken and watch it disappear!

Barbecued Chicken Recipe

Barbecued Chicken

Spice Rub  –  2 Tbsp. onion powder

4 tsp. salt or salt substitute

1 Tbsp. paprika

2 tsp. garlic powder

1 ½ tsp. chili powder

1 ½ tsp. pepper

¼ tsp. ground turmeric

Pinch cayenne pepper

Sauce:   2 cups ketchup

3 Tbsp. brown sugar

2 Tbsp. dried minced onion

2 Tbsp. thawed orange concentrate

½ tsp. liquid smoke, optional

Pat chicken dry.  In a small bowl, mix spice rub ingredients; reserve 1 tablespoon spice rub for sauce.  Rub remaining spice rub on all sides of chicken.

Grill chicken, uncovered, over medium heat 20 minutes, skin side down.  Meanwhile, combine all sauce ingredients; stir in reserved spice rub.  Turn chicken; grill 20-30 minutes longer or until juices run clear, basting frequently with sauce.            8 servings
