Caramel Apple Crisp Squares

6 Tbsp. butter, divided

1 cup finely CRUSHED square shortbread cookies

3 Tbsp. sugar, divided

1 pkg. (8 oz.) Philadelphia Cream Cheese, softened

2 eggs

1 cup milk

1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding

1 Tbsp. cinnamon

1/4 tsp. nutmeg

2 cups chopped Granny Smith apples (about 2 apples)

1/2 cup flour

1/2 cup packed brown sugar

1/2 cup old-fashioned or quick-cooking oats

10 Kraft Caramels

2 Tbsp. water

Heat oven to 350 degrees F.  Line 8 inch square pan with foil, with ends of foil extending over sides; spray with cooking spray.  Melt  2 tablespoons butter; mix with cookie crumbs and 1 tablespoon granulated sugar.  Press onto bottom of prepared pan.

Beat cream cheese in medium bowl with mixer until creamy.  Blend in eggs.  Gradually beat in milk.  Add dry pudding mix; beat 2 minutes.  Pour over crust.

Mix cinnamon, nutmeg and remaining granulated sugar; toss with apples in medium bowl.  Spoon over cream cheese batter.

Melt remaining butter.  Combine flour, brown sugar and oats in separate bowl.  Add butter; mix well.  Sprinkle over apples.

Bake 1 hour or until toothpick inserted in center comes out clean.  Cool completely.

Microwave caramels and water in microwaveable bowl on HIGH 1 minute, stirring after 30 seconds.  Continue microwaving and stirring in 10 seconds-intervals until caramels are completely melted.  Drizzle over dessert.

Refrigerate several hours or until chilled.  Use foil handles to remove dessert from pan before cutting into squares.

TIPS:  Variation:  For a slated caramel  topping, stir 1/2 tsp. salt into melted caramels before drizzling over dessert as directed.

Nutty Marshmallow Bars

Nutty-Marshmallow-Bars-2I made these Nutty Marshmallow Bars many years ago.  I remember  them being very tasty.  So if you would like to try them, here is the recipe.

Nutty Marshmallow Bars

1 cup chopped salted blanched peanuts

3/4 cup flour

3/4 cup quick-cooking or regular oats

2/3 cup packed brown sugar

1/2 tsp. baking soda

1/2 tsp. salt

1 egg

1/3 cup margarine. softened

1 jar (7 oz.) marshmallow creme

1/3 cup caramel ice cream topping

1 cup salted blanched peanuts

Heat oven to 350 F.  Stir chopped peanuts, flour, oats, brown sugar, baking soda, salt and egg in a large bowl.  Stir in margarine until mixture is crumbly.

Press in ungreased 13 x 9 inch pan.  Bake 10 minutes.  Spoon marshmallow creme over HOT layer.  Let stand 1 minute; spread evenly.  Drizzle topping over creme; sprinkle with 1 cup peanuts.

Bake until golden brown, about 20 minutes.  Let stand until cool, then loosen edges from side of pan with WET KNIFE.  Cut into 3 x 1 1/2 inch bars with wet knife.

This recipe, Apple Cinnamon Bars is from Diabetic Connect.  They taste like they came from the bakery!  No wonder your family will be clamoring for more.

 

Apple Cinnamon Bars Recipe

Apple Cinnamon Bars

1 cup white all-purpose flour

¼ tsp. salt

½ tsp. baking soda

½ tsp. ground cinnamon

½ cup brown sugar

1 cup Oats, rolled, baked value

½ cup vegetable shortening

4 medium apples

Preheat the oven to 350 F.  Put the flour, salt, baking soda, cinnamon, brown sugar, and oats in the mixing bowl.  Stir together.

Add the shortening to the bowl.  Use two table knives to mix the ingredients and cut them into crumbs.

Lightly grease the bottom and sides of the baking dish with a little bit of shortening.  Spread half of the crumbs mixture in the greased baking dish.

Remove the core from the apples and slice them.  Put the apple slices into the baking dish.  Top the apples with the rest of the crumb mixture.

Bake in the oven for 40-45 minutes.  Cut into squares.  It will fall apart easily.
