Bold ingredients give these tender grilled steaks a taste you won’t soon forget.  We loved the slightly sweet and pleasantly smoky glaze.  Get ready to make mouths water!

Chili-Beer Glazed Steaks

2/3 cup chili sauce

2/3 cup spicy steak sauce

½ cup chopped shallots

½ cup beer or non-alcoholic beer

4 boneless beef top loin steak (2 oz. each)

½ tsp. salt

½ tsp. pepper

 

In a small saucepan, combine the chili sauce, steak sauce, shallots and beer.  Bring to a boil.  Reduce heat; simmer, uncovered, for 12 – 15 minutes or until slightly thickened.  Set aside ½ cup for serving and keep warm.  Sprinkle steaks with salt and pepper.

Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack.  Grill steaks, covered, over medium heat or boil 4 inch from the heat 4 – 6 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 145 F.; medium, 160 F.; well-done, 170 F.), basting occasionally with sauce mixture.  Serve with reserved sauce.        4 servings

Using packaged meatballs helps save time in the kitchen and they are just as tasty as homemade.  My friends look forward to enjoying these meatballs at our holiday gatherings and there are never any leftovers!  The sauce is tangy yet sweet, and the festive color is perfect for any holiday party.

Cranberry Chili Meatballs Recipe

 

Cranberry Chili Meatballs

1 can (14 oz.) jellied cranberry sauce

1 bottle (12 oz.) chili sauce

¾ cup packed brown sugar

½ tsp. chili powder

½ tsp. ground cumin

¼ tsp. cayenne pepper

1 package (32 oz.) frozen fully cooked homestyle meatballs, thawed

In a large saucepan over medium heat, combine the first six ingredients; stir until sugar is dissolved.  Add meatballs; cook for 20-25 minutes or until heated through, stirring occasionally.            6 dozen

I came across this recipe while living abroad many years ago.  These meatballs are as finger-licking good as barbecued ribs but easier to eat.

Barbecue Meatballs

2 eggs

½ cup evaporated milk

1 cup dry bread crumbs

1 small onion, chopped

1 tsp. salt

½ tsp. pepper

2 Lbs. ground beef

Sauce:    1 ½ cups water

2/3 cup packed browned sugar

¼ cup chili sauce

3 Tbsp. cider vinegar

3 Tbsp. soy sauce

2 Tbsp. ketchup

1 ½ tsp. ground ginger

¼ tsp. salt

1/8 tsp. pepper

Dash Worcestershire sauce

In a large bowl, combine the first six (6) ingredients.  Crumble beef over mixture and mix well.  With wet hands, shape into 1-inch balls.  In a large skillet, brown meatballs in small batches over medium heat, turning often.  Remove with slotted spoon and keep warm; drain.

In the same pan, combine sauce ingredients.  Bring to a boil over medium heat.  Reduce heat; add the meatballs.  Simmer uncovered for 30 minutes or until sauce is absorbed.       6 ½ dozen

Simple-to-make appetizers, Apricot Chicken Wings, are the key to easy entertaining.  A five ingredient marinade flavors these juicy and tender chicken wings.

2 Lbs. chicken wings

1 cup apricot preserves

2 Tbsp. cider vinegar

2-3 tsp. hot pepper sauce

1 ½ tsp. chili powder

1 garlic clove, minced

 

Cut chicken wings into three sections; discard wing tips.  In a small bowl, combine the remaining ingredients; pour ½ cup into a large resealable plastic bag; add chicken.  Seal bag and turn to coat.  Refrigerate for 4 hours or overnight.  Cover and refrigerate remaining marinade.

Drain and discard marinade.  Place wings in a greased foil-lined 15 in x 10 in x 1 in baking pan.  Bake at 400 F. for 30-35 minutes or until juices run clear, turning and basting occasionally with remaining marinade.          Yield:  2 dozen
